Dread conch curry
Pressure cook conch with scallions and garlic, water, one hour or a little more low heat.
Pull conch and chop into bite size pieces.
Irish potatoes, scrub skins, peeled and cut into bite size pieces.
Peeled and chop 1 onion, 3 cloves garlic cut into half bite sizes and some more scallions add to mixing bowl.
Stir up in bowl with half teaspoon salt, several dashes of pepper and 1 1/2 teaspoon curry powder.
In a sauté pan add 1 sliced garlic clove 1 1/2 teaspoon curry powder and 2 tablespoons oil
"Turn up heat to start burn of curry. BURN it mon!"
Add scotch bonnet or other hot pepper into burn and then add chopped conch to burnt curry mix and stir to coat conch
Add bowl of potatoes and onion to sauté pan and mix well
Season to taste with salt or more curry as necessary
Add thyme and fresh uncut scallion, Add scotch bonnet garnish near end
Sauté on low heat for 25 minutes
Dread Jerk Marinade
Lots of garlic
2 onions quartered
Large scallions about a handful
Scotch Bonnett (2)
Add seasonings ( salt, pepper)
Dry Pimento seasoning
Some oil to mix in
Hot Pepper sauce
